In 1926 Dante Scapigliati opened his pastry workshop in Florence, making use of the experience in producing biscuits and pastries learned during the years spent at the Biscuit Factory “Digerini and Sailors.” Having to deal with the modern consumer society, his son Giorgio was able on the one hand to maintain the artisan quality of the product, on the other hand to respect the need for greater productions. This, thanks to the design of some machines that faithfully reproduced the “manual way of doing”. In the 70s, Scapigliati Dolciaria established itself as a well-known producer of cantuccini in the Tuscan territory. Thanks to the introduction of the first machines, Giorgio Scapigliati, Dante's son, allowed the company to develop greater production capacity, while maintaining the artisanal quality of the product, thus acquiring new customers also in the large-scale distribution channel, both in Italy and abroad. Today, Giorgio Scapigliati's children, Roberto and Daniele, carry on the confectionery tradition handed down by the family with respect, passion and dedication. Research for the best ingredients and continuous refinement of recipes guide their work every day.
