Metta Gluten Free flour was inspired by my son who was diagnosed with a gluten-sensitivity about 8 years ago. This meant no more wheat based Indian flatbreads like chapatis (or tortillas), which are a staple in North Indian cuisine. We tried all different kinds of gluten free flatbreads or tortillas and gluten free flours we could find in retail stores and online, but the taste and texture did not satisfy the palates. They were all and created tasteless, dry, and brittle flatbreads. Plus, they had other allergens like corn, soy, dairy, eggs, etc. As a personal challenge, I started experimenting with lots of gluten free flours to mimic the familiar taste and texture of whole wheat flour to create traditional flatbreads that are soft and pliable. Metta gluten free flour blend was developed after months to years of many iterations of trial and error. Metta gluten free flour is a healthy multi-whole-grain flour blend, which contains ancient grains and seeds like sorghum, teff, and flaxseed. Metta gluten free flour is free of GMOs, corn, soy, dairy, eggs, and nuts. The best part is that in addition to making soft and pliable tortillas and chapatis, it also makes moist and tender baked goods like muffins, cakes, brownies, cookies, breads, pancakes, and so much more. No one can ever tell the baked goods are gluten free - yes it is THAT good! We have few local chefs in Dallas that use it to make cakes, cookies, breads, and pizza crust.
