About MiMAKi

MiMAKi’s Umeboshi are handcrafted in Minabe Town, Wakayama Prefecture—the center of Japanese plum cultivation—at a historic factory with over 100 years of continuous production. Using traditional methods, we work exclusively with A-grade Kishu Nanko plums, known for their soft texture, rich aroma, and balanced acidity. Our current lineup includes three SKUs designed to appeal to both traditional and modern consumers: SHISO – A classic, traditional umeboshi pickled with red shiso leaves. Bold, tangy, and authentic. KOMBU – A low-sodium, umami-forward variety pickled with premium kombu from Hokkaido. Mild and versatile; a strong seller among repeat customers. HACHIMITSU – A low-sodium, lightly sweetened variety pickled with apple vinegar and honey. Approachable and especially popular with first-time Umeboshi consumers and families. MiMAKi performs well as a premium pantry item, functional food, or Japanese specialty product, with strong appeal to health-conscious and globally curious customers.
