GRAIN IS OUR MEDIUM FOR CHANGE. Dry Storage is an artisan mill working with chefs, bakers, brewers, distillers, and farmers to rethink how grains are grown, milled, and used. Through our mill, bakehouse, and restaurant, we focus on flavor, performance, and a deeper connection to ingredients. Many of our flours are made from heirloom and regionally adapted wheat varieties. These grains are better suited to local soil and climate, require fewer inputs, and are often easier to digest. We only mill grain that produces exceptional results in the kitchen—nothing else makes the cut. We stone mill on American-made, hand-dressed granite, keeping the grain cool to preserve flavor, nutrition, and character. This approach yields fresh, minimally processed flour that performs beautifully and reflects the grain it comes from.
