About Salt Blade

At Salt Blade we believe in direct support of sustainable farming practices. All of the meat we use comes from Olsen Farms in Colville, WA. The Olsen family raises heritage pigs that feed on the barley that grows abundantly on their land. We transform their meat into 14+ flavors of dry cured salami. Experience the difference of responsibly sourced meats. We also believe in science, and we find the use of celery-based nitrites simultaneously misleading and miseducating to consumers. We also disllike the vegetal off taste they add to meats. The use of nitrate and nitrite to cure meat has a significant food safety benefit by preventing the growth of Clostridium botulinum which causes botulism, one the deadliest foodborne illnesses. While the myth that nitrite is linked to various diseases persists, studies have shown that not only are nitrate and nitrite safer at the levels used in our production, they also can have significant health benefits.
