Jessica Huszar has always been captivated by the intricate dance of molecules and the magic of fermentation. As a molecular biologist, she spent years unraveling life's mysteries at a microscopic level. However, her passion for complexity extended to her home kitchen, where she was enthralled by cooking, especially fermentation. In 2018, she merged her scientific expertise with culinary curiosity, founding Häxan Ferments. This venture brought her naturally fermented creations to Seattle's food scene, starting with chili pepper hot sauce. Using all-natural techniques perfected at home, she crafted hot sauces and raw vinegars that are flavorful, slowly crafted, and rooted in the Pacific Northwest's agricultural bounty. Jessica’s recipe creation is both methodical and imaginative. Often starting with a star ingredient like crisp radish or refreshing cucumber, she experiments until a unique and delicious gourmet condiment emerges.
