Our Seventy year long History Fairy tales normally start with Once upon a time, our history begins with Zelindo. Zelindo was the huntsman at Villa Saletta, a beautiful and huge farm in Palaia, Tuscany, surrounded by lush woods. Zelindo used to combine his work, and his life, with his great passion for truffles. Zelindo was highly trusted and respected by his employer, who was the owner of the estate and in charge of the business. He was a wealthy man and all the people living in Palaia, in those days, were basically working for him. Whenever the landlord had guests, it was Zelindo’s job to take good care of them. The huntsman soon realized that all the guests, generally coming from Milan, Turin and Verona, were indeed interested in bird and wild boar hunting but they were more interested in truffles, so difficult to find up north. Zelindo soon became their personal truffle hunter and purveyor. At that time, Zelindo used to ride a huge green Vespa scooter. It was common to see him zooming on it, like a crazy man, all the way up to Villa Saletta and then disappearing in the forest, swallowed by vegetation. He would have resurfaced, eventually, with its pungent treasure. White truffles during the months of October/December and black truffles during the Spring/Summer months. When the demand was high and his supply was low, Zelindo would buy truffles to resell. Today the tradition is kept alive by the 4th geberation of the Savini Family.Read their story
