We start with either nixtamalized corn tortillas (an ancient Aztec method that makes corn more digestible) for MASA or with naturally grown potatoes for Vandy. The tortillas or potatoes (depending on the product) are then fried in 100% grass-fed tallow, a nutrient-dense fat that imparts a rich flavor.
