A lawyer by day and lifelong cookie lover, Taylor spent years honing her skills in the baking department as a form of stress relief. While constantly scoping out the cookie aisle - from refrigerated doughs to baking mixes - she noticed a frustrating trend: the best-tasting cookies were rarely natural or allergen-friendly, and the healthiest ones rarely satisfied the craving for something soft and truly delicious. Like any good problem solver - she began developing her own recipes, eventually rediscovering dates - an ingredient she had once used in nostalgic holiday treats - as the key to sweetening naturally without added sugar. After more than 400 batches and countless taste tests, Unicorn Bites was born: soft, delicious cookies made with all-natural, allergen-friendly ingredients. Taylor now juggles her law career along with running Unicorn Bites from Montclair, NJ, where she lives with her husband and her adorable Westie, Rigatoni, who snuck some early samples along the way, and also inspired the brand's beloved mascot!
