At La Belle Drêche, we over-cycle spent barley malt from brewers (drêche). But what is drauche? Drain is a residue that appears during the production of beer. For each production of 1000 liters of beer, a brewer produces around 300 kilos of drauch. And this waste, which is ultimately nothing more than malted barley without its sugar, is a source of hassle for him, because he can't do anything with it and has to get rid of it quickly. For us, it is a magnificent resource, rich in fiber, high in protein and low in calories! We have developed a range of 4 aperitif crackers in Nutriscore B and will develop a range of gourmet cookies in a few months.
