THE FRESH COFFEE AROMA, WORKED AS THE ANCIENTS That of Columbia Roastery is a story that began in 1963 in Lercara Friddi in the heart of archaic Sicily, where the flavors and aromas of Sicilian traditions remain intact over the centuries and modernity. In front of the former “duty” office, next to the historic Church of San Matteo, in a place once called “the old lady’s tavern”, a meeting place for sulfur miners, the “Columbia coffee shop” settled , among the old vaults of a centuries-old building of the main road, in the historic center of Lercara. It was in these rooms, that belonged to a Colonel of the Italian army from Lercara, “uncle” Alessandro, a well-known local animal trader, began the adventure of a Roasting Company, the oldest in the entire interland, which boasts over half a century of processing and dissemination of Culture of the Fresh Coffee revisited in Sicilian key. Slow roasting with constant flame, and supervision along all the processing phases of sensory control of 5 generations of roasters. Sight, smell and human hands, without mechanical and chemical-industrial sophistications that reduce the final product to a mere commodity instead of the unique fruit of a unique artisan work.
