About Virginia Spores

Virginia Spores is a gourmet mushroom farm based in Essex, Virginia, founded in 2021. Our work is rooted in sustainable agriculture and land restoration. We cultivate Oyster, Lion’s Mane, Shiitake, and Chestnut mushrooms. We operate a closed-loop system where nothing goes to waste: the spent mushroom substrate from our grow rooms is used to restore old, depleted farmland. On this revitalized soil, we grow a wide variety of fresh vegetables and herbs that we harvest and sell directly. From this ecosystem, we offer fresh and dried gourmet mushrooms, fruiting blocks, and our line of umami seasonings. To create our seasonings, we specifically harness our farm-grown Oyster mushrooms, pairing them with select herbs and peppers grown in our restored soil. By utilizing the natural Glutamate and Inosine monophosphate found in Oyster mushrooms, these blends create an "umami synergy"—exponentially magnifying the savory flavor of food to create incredible depth. We stand on the value of honest, farm-grown ingredients. Whether through our fresh produce, our dried mushrooms, or our seasonings, we are proud to share the harvest of our restored farmland with local markets, specialty retailers, and anyone who loves exceptional food.
