This “zhou cha” (ball tea) is a classic of Chinese tea culture. Green tea obtains its charismatic form through an elaborate process. In a wok heated over a wood fire, the loose tea is waved and shoveled for up to five hours. The result is gunpowder-like globules that, after preparation, produce a beautiful golden yellow cup with a mildly smoky and slightly tart aroma.
