It is the most marbled part due to its intramuscular fat, located in the best part of the loin, between the shoulder and the head of the loin, and is very juicy, tender, and flavorful. These pigs are proudly raised in a free-range system on the vast lands of the Dehesa Extremeña and are fed with acorns during the montanera season.
