Broken Emmer Wheat is obtained from whole emmer grains. It is simply stripped of the chaff by breaking each grain into several parts and subsequently adjusted in size with a special machinery. Broken emmer requires 10 minutes less to boil than whole emmer and does not require soaking. After cooked it takes on the consistency of semolina. Externally it has an amber light brown color.
