Panela is an unrefined whole sugar obtained from sugarcane juice through a completely artisanal process. This juice is cooked at very high temperatures until it becomes a thick molasses, which is poured into molds of various shapes—square, round, conical, among others—where it is left to dry and solidify. In producing countries, panela is usually consumed in blocks, cutting the necessary amount according to its use. To facilitate its consumption in other markets, especially for export, it is also available in grated or powdered form. In addition to its sweet and natural flavor, panela is rich in nutrients.
