Black lemon is an essential condiment in Persian cuisine. It is not actually a lemon, it is a lime, a close variety of citrus, hence its Persian name Loomi. Its processing method is almost identical to that of black lemon, the difference being that it is peeled before being dried. Without its peel, it does not develop the slight bitter notes of black lemon. On the tree, it appears as a small green lemon. It is picked, then blanched in salted water, then peeled before being dried in the desert sand where it will remain for several weeks.
