Sugar kelp (in Latin Saccharina latissima) is a brown algae named because it contains the sugar substance mannitol, which gives the leaves a slightly sweet taste. Sugar kelp is a source of healthy nutrients such as iodine, calcium, and fiber. The iodine content is high. Dulse (in Latin Palmaria palmata) is a red algae named because its leaves often have a reddish or purplish hue. Dulse has a slightly salty and umami-like taste.
