Cinnamon is the bark of a tree, the cinnamon tree, which, as it dries, rolls up on itself to form a stick. These sticks are then ground to obtain the cinnamon powder. This woody spice can season dishes and drinks. Its use is best known in sweet: it works wonders in pastries, creams, gingerbreads, brioches, compotes... It goes particularly well with apples and chocolate, and also perfumes hot chocolates and mulled wines very well for example. Perhaps less well known, it is also used with savory dishes, especially in Indian and Oriental dishes, such as couscous and tagines.
