Sourwood Honey foraged in June and July in Dallas, Georgia along with notes of Clover and Sumac that bloom at same time. Sourwood Honey is known as the Pinot Noir of honeys as the Sourwood tree only blooms a month a year in elevations above 1800 feet, and bees will not forage the tree in the rain. It has a less sweet and slightly smoky flavor compared to Wildflower honey that is typically higher in fructose.
