Using an organic Riesling wine base from the best wines of Alsace, we produced this vinegar in Ile-de-France. All production took place in French oak and Burgundy barrels. A slow natural acetic fermentation (acetification), started with an indigenous mother. 36 months of maturation of the Burgundy oak barrels. No preservatives. Unfiltered. Manual bottling.
