Our ultra-high polyphenols olive oil is made with care and precision, making it a rare and valuable product. One of the most significant challenges when producing ultra-high polyphenols olive oil is maintaining the quality of the trees. We plant Chetoui olives trees way fewer per acre than we normally would and provide them with special attention and care, including irrigation during droughts. Our Chetoui olives are hand harvested very early, in October, when the concentration of oil is very low to extract the highest amount of Polyphenols . We ensure that our olives are pressed within hours of being picked, using only the cold-pressed method. This process preserves the quality and nutritional value of the olives, resulting in an oil that is rich in flavor and nutrients.
