AOC Saint Emilion Grand Cru 2015 Grand Vin de Bordeaux Winemaking: A selection of vine plots is made in order to harvest the best grapes to make this cuvée. A first sorting is carried out by this same machine thanks to a system for calibrating and ejecting undesirable parts by a wind tunnel. A 6-person manual sorting table and crushing are carried out as soon as the grapes are received in the cellar. We practice 72 hours of cold maceration after fermentation, in order to extract a beautiful color and a maximum of aromatic precursors. This is followed by alcoholic fermentation (10 days) and finally a 30-day maceration under marc, which will give the wine all its tannic structure and reveal the qualities of the vintage. Breeding/Assembly: The breeding period lasts an average of 18 months. It is made in new French oak barrels. After this aging period, the vintage is blended and then bottled at the Château.
