Basque piperade is a traditional dish from the Basque Country, both tasty and easy to prepare. This specialty is composed of a mixture of onions, bell peppers, tomatoes and Espelette pepper, all cooked in olive oil. Piperade can be served alone or with meat, fish, or eggs. We recommend it as an accompaniment to a nice slice of tuna from Saint-Jean-de-Luz, or a few slices of Bayonne ham.
