Fruits of the Forage è nata dal desiderio di utilizzare la frutta e le piante selvatiche che abbiamo trovato per creare prodotti per la comunità, mostrando alle persone il potenziale degli ingredienti sottovalutati e spesso trascurati. La nostra contea natale, il Cheshire, è meglio conosciuta come contea lattiero-casearia, tuttavia in passato i frutteti fornivano raccolti importanti qui. I piccoli frutteti della contea fornivano rabarbaro, pere, susine, mele da cucina e prugne per il mercato, mentre le pere e soprattutto le susine venivano utilizzate anche per tingere cotone e seta filata nei mulini di tutta la regione. Nella nostra infinita ricerca di frutta abbiamo trovato i resti di questi frutteti e siepi, a lungo trascurati ma che ancora producevano frutti. Mentre esploravamo, abbiamo incontrato frutta che consideriamo di gran lunga superiore per le esigenze di conservazione rispetto alle varietà moderne allevate esclusivamente per il consumo fresco.
