Wild article differs from the common article for its special wild characteristic nutritional properties (high content of fibers and proteins), and its intense taste. The processing of the artichoke is quite complex because the plant is covered with thorns and barely allows the harvest of its fruits. The artichokes are handcrafted and particular skill is required to remove the spiny leaves. It grows exclusively in untainted areas, especially on the Calabrian Ionian side and the plant is very luxuriant and can reach 2 meters in height. The artichoke in brine can be used for preparing gourmet pizzas or as a main ingredient in first and second dishes.
