Red Onion Sauce: This tomato sauce enriched with red onions (softer and sweeter than yellow ones), and flavored with oregano, is a traditional preparation hard to find outside of Italy... except with us! It is a typical specialty of Calabria. The Calabrian red onion? A true local product, whose taste literally transforms a simple pasta dish with tomato sauce. Good pairings It is preferably paired with spaghetti, for a tasty and fuss-free dinner. But this sauce is also a good base for cooking fried or scrambled eggs ("uova fritte"), a frittata, or a chicken or rabbit casserole, especially when you're out of onions! Tips Heat the sauce in a high-sided pan with 2 tablespoons of extra virgin olive oil, add the drained pasta, stir for a minute, and it's ready! After opening, the jar can be kept in the refrigerator for 3 to 5 days.
