The first wine to achieve Pasotismo status. We want this wine to be a refined expression of what has come to be considered the ‘classic Somontano style’ which is essentially big, bombastic flavours from international varieties with high oak, high alcohols and no punches pulled. For our wines we want some of this style, but not all of it. We want to embrace the deep cherry, brambly, black forest gateaux fruit profile and the silky smooth tannins, but to step away from the big alcohols and over blown oak. This shift started with those barrel fermented wines in 2018 but production now includes hand harvesting, concrete maturation and fermentation, wild yeast ferments, extended stem and skin contact, and an endless quest to make this wine a flag bearer for the wines that have made Somontano. Every year the approach changes slightly but that goal always remains the same. This is a wine that knows where it is from and what has gone before.
