This squid ink sauce is one of our very first products and has been one of our best-sellers since its creation! Its base is estratto, a very dense and flavorful dried tomato concentrate, sold notably at the Vucciria market in Palermo, which gives it that slightly sweet taste typical of Sicilian tomato sauce. We add pieces of cuttlefish, the ink of the gastropod, and aromatics... Good pairings With long pasta, such as spaghetti, linguine, or tagliatelle; with strips of cuttlefish or calamari sautéed in a casserole or pan; and in a risotto, of course, simply prepared with this sauce, or additionally garnished with baby squid or prawns; in all cases, chopped parsley (or grated lime zest, for the "prawns" version) will highlight its beautiful black color! Moreover, you can also use it to prepare a Spanish-style "arroz negro."
