Their understanding of Indian terroir and varietals lend a foundation for experimental processing techniques than enhance these profiles. *This Alchemy DW5 lot features coffee that is fermentated in-cherry for 48 hours, then depulped and fermented with microbe-enriched mosto for 36 hours before washing and slow drying on raised beds for 18 days. The result is a highly complex coffee with kiwi, lemon-lime soda, oolong tea and toasted cashew notes.
