Norcino Salumi is a hyper-boutique Salumi producer with a Slow Food Snail of Approval, utilizing animals and ingredients from the Pacific Northwest. We make everything by hand utilizing traditional methods, natural casings, and artisan technique. Our Old World Salumi is made in small scale batches and slow aged for maximum complex flavor development. We aim to create a product that is a true representation of the Pacific Northwest.
