The potatoes (sour variety) are ripened in the soil, then picked, washed, lightly peeled and cut into slices. Fried in pure sunflower oil (the best because it is tasteless) at 155°C, they are finally drained, dried, allowed to cool at room temperature and lightly salted by hand with pure fine sea salt.
