It is a smooth and floral red, with aromas reminiscent of a romantic dinner in a garden where violets, lavenders, and cherries delight our senses. We will hand-harvest these grapes in Anjou (organic vineyards). The grapes arrive at the winery at 8°C. Half of the bunches are placed directly into a tank saturated with carbon dioxide, which is known as carbonic maceration, extracting color and aromas of fresh fruits and spices. The rest is partly foot-crushed in another tank, and partly left as whole bunches, to add more complexity. We sipped it with a young Brie de Melun, to the sound of 80s Italian rock.
