About Bayaze
Bayaze Tahini comes from Amedye, an Iraqi mountain town long known for its sesame-growing heritage, yet largely untouched by global trade and modern food systems. Tucked away in the highlands, this region remained inaccessible to most of the world for generations, allowing its agricultural traditions and flavors to stay remarkably pure. Our name honors Bayaze, a mother and craftswoman who began making tahini in 1948 to provide for her family. What started as small-batch production rooted in care and necessity grew into a family tradition passed down through generations and still practiced today. We use heirloom sesame seeds grown locally and hand-harvested by small family farms. The seeds are carefully washed, roasted over wood fire, and stone-ground to create a tahini with deep flavor, natural sweetness, and a smooth, balanced texture. Nothing is added. Nothing is rushed. What makes Bayaze different from most tahini in the U.S. is its origin and integrity. Our tahini is not designed for mass production. It reflects a specific place, a preserved process, and a lineage of craftsmanship rarely found on modern shelves.
